The word shrimp
can often be used interchangeably with the terms
"prawn" and "scampi". While scampi generally
means cooked shrimp cooked in butter or garlic,
prawn refers to the Freshwater Shrimp.
The generic name
of the Freshwater Shrimp is Macrobrachium rosenbergii,
and is also known as the Malaysian prawn. Freshwater
Shrimp is farm raised in Hawaii, California,
and other states. These Freshwater Shrimp can
reach a weight of 4-6 ounces and are quite large.Dominant
adult males of the Freshwater Shrimp family
have large claws. The name macrobrachium actually
means "big arm".

is usually sold by count, and this is expressed
as a numerical range of shrimp per pound. A
count of 41-50 means there are between 41 and
50 shrimp per pound. The smaller the count per
pound the larger the shrimp. In the market,

various size names such as small, medium, large,
or jumbo. When buying Freshwater Shrimp, you
should compare prices based on the actual count
per pound, not these size descriptions, for
they may vary from store to store.

from translucent to opaque, tastes great and
is good for you. However, you should not overcook
Freshwater Shrimp as it will then become tough.
