Fresh crabmeat
may spoil after a certain point of time. So
pasteurization is a process which increases
the shelf life of crab meat. The meat is specially
heat treated and kept in airtight containers.
This pasteurized crab meat can be kept refrigerated
at 33-35 degrees and kept for 6-12 months. Pasteurization
eliminates the active bacteria from the crab
meat. This pasteurized crab meat can be used
for making crab cakes, canapés, salads,
appetizers and pizzas along with sauce and mayonnaise.
A very special
variety is the Blue swimming crab which is available
all the year round from the tropical waters
of Southeast Asia. The meat from the body is
white and the claw meat is brown.
Crab cakes are
made from various types of pasteurized crab
meat: Premium, Jumbo Lump, Good, Backfin, Poor,
Claw. These are the various grades used. The
best available meat for making crab cakes comes
from Maryland's Chesapeake Bay. They are famous
blue 'beautiful savoury swimmers'.
Jumbo Lump are
the largest pieces of meat from the body adjacent
to the backfin. This is the most expensive of
all pasteurized crab meats and can be used in
any recipe. Backfin is white body meat which
consists of lumps as well as flakes. The pieces
are smaller and they can be used to make good
crab cakes. Special consists of the flakes of
white body meat but not the Lump meat. It is
good for using in crab soups, casseroles and
dips. Claw is the brownish meat from the claws.
It is tasty and can be used in crab soups as
well as crab cakes if it is mixed with backfin.
There is a great
demand for pasteurized crab meat among the consumers.
Hence most restaurants have to mix local crab
meat along with the blue crab meat got from
Maryland. This has to be done to keep up with
the popular demand.
We therefore
see that pasteurized crab meat has a delicious
taste and meat taken from different parts of
the body of the crab can be cooked differently
and also tastes different.
