Shrimp, a mouth watering delicacy may be spiced with various different ingredients. The shrimps along with the spice mixture can be used to make very many exotic dishes.

The versatility of shrimp meat, its flavor and taste allows it to be used in any dish and instantly transform it into something delicious.

Spiced shrimp in combination with wild rice is a dish worth mentioning here. First the wild rice is cooked with salt and water in a sauce for about an hour. Rice is then mixed as fluffed together with vinegar and oil. The shrimp is then cooked with bay leaf, peppercorns, cloves, coriander seeds and salt. Mixed together some vinegar, salt, pepper and oil and put it the shrimp mixture, to let it marinate for at least seven to eight hours. For garnishing, keep aside 15 shrimps. The remaining shrimps should be cut into half inch pieces and strained through a sieve so that the spices are discarded. Then mix the cut shrimp, the mixture of wild rice, minced parsley and pepper.

Cooking with spiced shrimp would be incomplete if one did not mention a highly palatable soup which can be made out of these. After the shrimps are shelled, they are rinsed carefully. The shell and heads are kept aside. Some lemon grass stalk is cut up and crushed. This crushed lemon grass is put into a cooking vessels with the shrimp shells and heads which had been kept aside. These are cooked in water along with coriander salt and pepper and allowed to simmer for half an hour. Strain the broth into another vessel. Take some more lemon grass stock, slice it and mix it with the broth. Simmer again for sometime. Add the shrimp and putt the cooking vessel on the fire once more till the shrimp meat becomes firm. Put in fish sauce, lime juice and sliced chilli. Serve this hot soup garnished with chilies, coriander leaves and lime leaves.

Jumbo spiced shrimps can be used to make an extremely tasty main dish. A spice mixture of cinnamon, black pepper, mustard and salt is mixed together properly. Cover the Jumbo shrimps with this coating and put into the refrigerator for an hour. After taking out from the refrigerator, the shrimp can be toasted over hot coals on both sides for a few minutes. In order to toast the shrimps, they have to be put into a skewer. This dish can also be baked in the oven. Whichever way it is cooked, it is equally delectable.

Spiced shrimp, we can therefore see, is extremely versatile and can be used to make hundreds of different dishes.
